The ingredient of Chicken koftas
- 1 tablespoon extra virgin olive oil
- 1 brown onion, chopped
- 1 garlic clove, crushed
- 1/4 cup (40g) Lucky pine nuts, finely chopped
- 2 teaspoons ground cumin
- 500g chicken mince
- 1 egg, lightly whisked
- 1/2 cup (100g) couscous
- Pita bread, to serve
- 1 punnet cherry tomatoes, quartered
- 2 Lebanese cucumbers, seeds removed, chopped
- 1/4 cup fresh mint leaves
- 1 tablespoon extra virgin olive oil
- 2 teaspoons fresh lemon juice
- Salt & freshly ground pepper
- Tzatziki, to serve
The instruction how to make Chicken koftas
- Heat the oil in a frying pan over a medium heat. Add the onion, garlic, pine nuts and cumin. Cook for 8-9 minutes or until soft. Cool slightly.
- Combine the chicken mince, egg, couscous and onion mixture in a bowl. Season. Divide into 16 even portions. Shape each portion into a 7-8cm long sausage shape. Refrigerate for 30 minutes.
- Thread the sausages onto skewers. Cook, turning, until cooked through. Serve with the salad, tzatziki and bread.
